Fried Catfish

What you’ll need:

1 Egg ( lightly beaten)

2 Tbsp Lemon juice

1/2 Cup all-purpose flour

1/4 Cup yellow cornmeal

1 tsp. Cajun seasoning

1/2 tsp. Garlic powder

1/2 tsp. Salt

4 Fillets catfish ( about 6 oz ea)

3 Tbsp Olive oil

2 Pie plates or shallow bowl

Nonstick skillet

Before You Start: Rinse fish fillets under cold water and pat dry.

Let’s Make it!

In a pie plate (or shallow bowl) combines the egg and lemon juice. In the other pie plate (shallow bowl) combine the flour, cornmeal, Cajun seasoning, garlic powder and salt. Dip catfish into egg mixture, then coat with cornmeal mixture.

In a large skillet, heat oil over medium heat. Fry fillets, two at a time, for 5-6 minutes on each side or until fish flakes easily with a fork.

Simple as that!
